Did you go out somewhere for lunch today? Or did you brown bag it?
When I used to go into an office I HATED bringing lunch. The thought of schlepping my lunch in my briefcase or backpack was anathema to me for two reasons. First, I don’t like cold lunches – very rarely will you see me eat a cold sandwich in general. That’s honky food. The other reason is volume. As you can tell from a lot of my posts, I’m a big eater. So I wasn’t about to commute with a big cooler
One of the many benefits of working from home is that I can make healthy, delicious lunches in my very own kitchen. Lunches full of flavor and free of MSG, sugar, and excess sodium. Lunches I can eat without having to pay someone to cook it or take my order. At least theoretically. Because I’m still finding myself going out to eat a few times a week.
Boom Boom works from home as well and we often have a “conversation” just like this:
Boom Boom: I’m hungry.
Hedonist: Well, make yourself some lunch.
BB: Isn’t that what you’re here for?
Hedonist: I don’t have time.
BB: Fine, no sex.
Hedonist: Um, what did you have in mind?
BB: I don’t know, you’re the food blogger. Make me something worthy of the queen I am.
Hedonist: Well, how about peanut butter & jelly on a stale piece of bread? I didn’t have time to hit the groceries…
BB: You’re cut off.
As you can probably surmise, I’ve become pretty crafty with making do with whatever’s in the fridge. I posted pictures of a couple dishes on my Facebook page under the not-so-creative title “Lunchtime Leftover Gourmet.”
My goal with these is to have them done in less than ten minutes, ideally five. This will leave me ample time to photograph the dish, transfer the pictures to my computer, upload to Facebook, and then get me back to work in a minimal amount of time. That is, if I can find my damn camera.
Mixed greens, roasted beets, tasso duck breast bacon (from Biercamp), fried egg, and mustard vinaigrette.
What? You don’t have tasso duck breast bacon laying around in your fridge? Barbarian…
Anyhoo, I’m always on the lookout for quick lunch ideas. Do you have any good ones to share? Or for that matter, any not-so-good ones?
I eat oatmeal for lunch most of the time. I can’t believe you have these for lunch. They look amazing.

I love to pimp my ramyon (I only buy the Korean ramyon by NongShim!) with anything I can find: frozen or fresh veggies, eggs, cheese, ham…always a good choice for me. 🙂

Your lunches look way better than mine! Because it’s quick and easy I’ll have hummus – homemade not store-bought topped with Kale salad. Both have lots of red pepper flakes so there is a bit of kick.
Another is, toast a piece of hearty bread, smear it with hummus, mashed avocado and top with roasted grape tomatoes. Drizzle with a bit of olive oil and balsamic vinegar. If your really hungry, make 2!
And yet another is egg salad. So that it’s not boring, I grate the eggs, add greek yogurt to give some tang, a tiny bit of mayo for that fat flavor and of course add red pepper flakes! Sometimes I eat in lettuce cups other times on Akmak crackers (Yum-sesame) and throw whatever veggies I can scrounge from the fridge on my plate. For some reason this is so filling….
These are somewhat healthy but with tons of flavor so they taste like they are bad for you. I see you like bacon, you can add that to any of the above!
Now I’m hungry…..
Oh! I am SOOO going to do that smeared hummus and avocado one.
Bacon, in whatever shape or form, makes anything better. Great lunch!!!! Now I’m hungrier than ever!
